Within this context, the Department of Food and Nutrition conducts research to scientifically explore all aspects of dietary life and thereby improve people’s quality of life. Developing new food materials, creating innovative food cultures, preventing disease, and promoting health are all key objectives of food and nutrition research. Recent advances in food science have enabled the development of various health-conscious foods. Low-calorie, high-protein foods and functional foods play a significant role in supporting modern individuals’ healthy eating habits.
Food and nutrition studies are broadly divided into three fields: food science, nutrition, and food service. First, the food science field focuses on studying food chemistry, food microbiology, food processing and storage, and food hygiene. Food chemistry deals with the components commonly found in food—water, carbohydrates, proteins, fats, vitamins, pigments, etc.—along with their structure, properties, and reactions, scientifically elucidating how the food we consume affects the body. This serves as foundational research for healthy eating habits, providing fundamental answers to what and how we should eat.
Food microbiology addresses spoilage caused by microorganisms, food fermentation processes, and the causes and prevention of food poisoning, such as bacterial food poisoning and mycotoxins. Fermented foods like kimchi, doenjang (soybean paste), and gochujang (chili paste), central to our traditional food culture, are widely recognized as health-beneficial foods. Recently, research has actively expanded beyond traditional fermented foods to include functional fermented foods, suggesting that future food culture will become even more diverse and abundant.
The field of food processing and preservation addresses the causes of food spoilage and the technologies to prevent it. Various preservation methods, such as refrigeration, freezing, drying, canning, and irradiation, extend the shelf life of food and facilitate storage. These technologies are becoming increasingly important in modern society, where urbanization and globalization are rapidly advancing. Food hygiene science addresses potential contamination factors and health hazards that can occur throughout the entire process, from food production to consumption. As social concern for food safety grows, the importance of related laws and regulations is also increasing.
The field of nutrition, distinct from food science, focuses on how ingested food is absorbed and utilized within the human body. Specifically, it analyzes how nutrients in the food we eat affect the human body, focusing on proposing nutrition management plans tailored to each individual’s health status and life stage. Basic nutrition studies the structure, function, metabolism, and deficiency symptoms of carbohydrates, fats, and proteins. Human physiology provides a comprehensive understanding of the body’s internal homeostasis and the functions of each organ.
Additionally, Lifecycle Nutrition covers the nutrients required and dietary management methods for each life stage—infancy, adolescence, adulthood, and old age. In the field of Diet Therapy, students learn through experiments how to design and apply diets for disease prevention and treatment. This academic foundation can be effectively applied to real-world dietary improvements.
Finally, the importance of the food service field has also been growing significantly in recent years. Food service management is a field that systematically operates meals in various organizations such as schools, hospitals, corporations, and the military, based on knowledge of food and nutrition. Because institutional food service directly impacts the health of numerous people, providing hygienic and balanced meals is extremely important. In particular, learning practical skills and operational capabilities through field-centered practice is essential.
Ultimately, the final goal of food and nutrition science is to enhance quality of life by enabling people to practice healthy and proper eating habits. The food we consume daily is not merely a commodity; it is a crucial factor determining health and happiness. Moving forward, food and nutrition science will continue to serve as a central pillar, driving the development of new food cultures and the food industry based on science and technology, thereby enriching and improving our lives.
